Ingredients for making Mocotó with white beans:

 2 kg of clean mocotó

 100 grams of chopped bacon

 5 cloves of crushed garlic

 100 grams of chopped paio

 200 grams of cooked white beans

 1 chopped celery stalk

 1 chopped carrot

 1 onion

 4 tablespoons of tomato paste

 2½ liters of vegetable broth

 3 tablespoons of oil

 parsley to taste

 chives to taste

 salt to taste

 black pepper to taste

 2 bay leaves

How to make Mocotó with white beans:

To make mocotó with white beans, start by placing the mocotó with the vegetable stock in a pressure cooker. Add salt to taste and cook for 30 minutes after applying pressure. Then chop the mocotó, strain the broth and set aside.

Tip: If you don't have vegetable stock ready, dissolve 1 broth tablet in 2.5 liters of water or simply use filtered water.

Place the oil, garlic, paio, bacon, onion and bay leaves on the fire. Saute for 5 minutes, stirring occasionally so as not to burn. Add the tomato paste and let it cook for another 2 minutes.

Place the chopped mocotó in the stew pan and also add the drained beans, celery and carrots. Mix everything and cover with the broth from the mocotó cooking. Cook for about 20 minutes or until this soup of mocotó and beans is thickened.

Taste your mocotó with white beans and match the flavor with salt and pepper, if necessary. Serve sprinkled with a little chives and parsley and enjoy!
